Somewhere between hour 12 and hour 36 of a fast, your liver runs low on stored glucose and your body shifts to burning fat as its primary fuel. Researchers call this the metabolic switch, and it is the entire point of intermittent fasting.

The fed state ends around hour 4
For the first three or four hours after a meal, your body is busy digesting and absorbing it. Insulin is high, blood glucose is high, and you are running on the carbohydrates you just ate.
It feels like nothing, because nothing is happening that requires effort.
Hours 4 to 12: spending the pantry
Once digestion finishes, insulin starts to fall. With less insulin circulating, your body shifts from burning fresh dietary glucose to drawing on glycogen, the stored form of glucose held in your liver and muscles.
A healthy adult liver holds roughly 100 grams of glycogen, with several hundred grams more in skeletal muscle (Jensen et al., 2011, Frontiers in Physiology). That is enough fuel for many hours of ordinary activity. Muscle glycogen, worth knowing, stays in the muscle. It cannot be released back into the bloodstream to fuel the brain.
Through this window you are still running on glucose. It is just coming from your own pantry instead of your plate.
This is the part of a 16:8 that most casual fasters actually experience. They think they are fasting. Metabolically, they are spending the contents of the fridge.
The switch itself
When liver glycogen runs low, two things happen. The liver begins producing glucose from non carbohydrate sources, a process called gluconeogenesis. It also ramps up the conversion of fatty acids into ketones, which the brain can use as fuel.
Insulin keeps falling. Glucagon, its counterpart, climbs. Body fat starts being mobilised in earnest.
The honest version of the timing: the most cited review of this transition (Anton et al., 2018, Obesity, doi:10.1002/oby.22065) places the switch somewhere between hour 12 and hour 36, depending on the person, the last meal, activity level, and whether you slept through part of it. Not everyone crosses at 12. Almost everyone has crossed by 36.
That is a wide window, and any app or article that promises you a precise hour is telling you something nobody knows.
Why most casual fasters never feel it
A strict 16:8 gives you, at best, a few hours on the far side of the switch. A 14:10, common for beginners, may give you none at all.
The lift people describe around hour 14 or 16, the one you keep reading about, is the switch consolidating. You rarely get it from a 12 hour overnight fast. You barely get it from a 14:10. You get it from a real 16, and more reliably from an 18.
This is the gap between "I tried fasting and felt nothing" and "I get why people do this."
What the switch actually feels like
It is different for everyone, and these are reports rather than guarantees:
- Hunger that was building around hour 10 quietly fades an hour or two later.
- Mental clarity that feels steady rather than jumpy.
- Energy that does not spike and crash the way coffee does.
There is no moment you can point to. The shift happens quietly, and most people notice it only because something they expected to feel, hunger or a mid morning slump, simply did not arrive.
What delays it
- Coffee, black: fine.
- Coffee with a splash of milk: probably fine.
- Coffee with sugar: raises insulin, sets you back.
- Bone broth: contains calories and protein, so it breaks the fast metabolically.
- "Fasting friendly" drinks with sweeteners: read the label. The evidence on non caloric sweeteners and insulin is mixed, and mixed is not the same as safe to assume.
The general rule is that anything with calories, and anything your gut treats as food, will at least delay the switch. The closer you stay to plain water, plain coffee, or plain tea, the cleaner the result.

You cannot feel hour 12 the way you feel hour 0 or hour 20. It is not a bell that rings. The point of watching the zone change on your home screen is that the visual cue tracks a real metabolic transition, approximately, without making you guess.
